Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 45 tbsp basil pesto (store-bought or homemade)
  • 4 slices sturdy bread (ciabatta, sourdough)
  • 4 slices provolone or fresh mozzarella cheese
  • 1 ripe tomato, thinly sliced
  • 1 cup fresh spinach or arugula
  • 12 tsp olive oil or butter (for toasting bread)
  • Salt and black pepper to taste (optional)
  • 1 tbsp mayonnaise (optional, for creaminess)

Instructions

  • In a medium bowl, combine the shredded chicken, pesto, and optional mayonnaise. Mix well and season with salt and pepper to taste.
  • Lightly butter or brush the outside of your bread slices with olive oil. Heat a non-stick pan, griddle, or panini press over medium heat. Toast the bread until golden brown and crisp on both sides.
  • Place two slices of cheese on one piece of toasted bread. Spoon half of the chicken pesto mixture over the cheese.
  • Top with tomato slices and a handful of fresh spinach or arugula.
  • Place the second slice of toasted bread on top. If using a panini press, close gently to heat through and melt the cheese. If not, gently press the sandwich in the warm pan for a minute or two.
