Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 4–5 tbsp basil pesto (store-bought or homemade)
- 4 slices sturdy bread (ciabatta, sourdough)
- 4 slices provolone or fresh mozzarella cheese
- 1 ripe tomato, thinly sliced
- 1 cup fresh spinach or arugula
- 1–2 tsp olive oil or butter (for toasting bread)
- Salt and black pepper to taste (optional)
- 1 tbsp mayonnaise (optional, for creaminess)
Instructions
- In a medium bowl, combine the shredded chicken, pesto, and optional mayonnaise. Mix well and season with salt and pepper to taste.
- Lightly butter or brush the outside of your bread slices with olive oil. Heat a non-stick pan, griddle, or panini press over medium heat. Toast the bread until golden brown and crisp on both sides.
- Place two slices of cheese on one piece of toasted bread. Spoon half of the chicken pesto mixture over the cheese.
- Top with tomato slices and a handful of fresh spinach or arugula.
- Place the second slice of toasted bread on top. If using a panini press, close gently to heat through and melt the cheese. If not, gently press the sandwich in the warm pan for a minute or two.
- Cut the sandwich in half and serve immediately for the best experience.
