Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 2 tbsp olive oil (for marinade)
- 2 tbsp fresh lemon juice (for marinade)
- 1 tsp dried oregano
- 2 cloves garlic, minced (for marinade)
- 1/2 tsp salt (for marinade)
- 1/4 tsp black pepper (for marinade)
- 1/2 tsp paprika (optional)
- 1 large English cucumber, grated and liquid squeezed out (for tzatziki)
- 1 cup full-fat Greek yogurt
- 1 clove garlic, minced (for tzatziki)
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh lemon juice (for tzatziki)
- 1 tbsp olive oil (for tzatziki)
- 1/4 tsp salt (for tzatziki)
- Freshly ground black pepper, to taste
- 2 cups cooked rice, quinoa, or fresh greens (for base)
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/4 cup thinly sliced red onion
- 1/4 cup crumbled feta cheese
- Fresh parsley or mint, chopped (for garnish)
Instructions
- 1. Prepare the Tzatziki: Grate the cucumber and squeeze out all excess liquid. In a bowl, combine strained cucumber with Greek yogurt, minced garlic, fresh dill, lemon juice, olive oil, salt, and pepper. Stir well, cover, and refrigerate for at least 30 minutes.
- 2. Marinate the Chicken: Cut chicken into 1-inch pieces. In a bag or bowl, combine chicken with olive oil, lemon juice, oregano, minced garlic, salt, pepper, and paprika. Toss to coat. Refrigerate for 20-30 minutes, up to 4 hours.
- 3. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Add chicken in a single layer and cook for 4-6 minutes per side, until golden brown and cooked through (165°F/74°C). Rest for a few minutes.
- 4. Assemble Your Bowls: Layer cooked grain or greens, cooked chicken, cherry tomatoes, diced cucumber, red onion, and crumbled feta. Top generously with chilled tzatziki sauce and garnish with fresh herbs. Serve immediately.
