  • 2 ripe avocados, pitted and scooped
  • 1/2 large cucumber, roughly chopped
  • 1/4 cup fresh lime juice (approx. 23 limes)
  • 1/4 cup fresh cilantro, roughly chopped
  • 1/2 small jalapeño, seeds removed (optional, for mild heat)
  • 1 cup vegetable broth
  • 1/4 cup plain Greek yogurt or sour cream (optional, for extra tang and body)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/8 teaspoon ground cumin

Instructions

  • 1. Prep Ingredients: Halve avocados, remove pits, and scoop flesh into a blender. Roughly chop cucumber and cilantro. De-seed jalapeño if using.
  • 2. Combine: Add avocado, cucumber, cilantro, jalapeño (if using), lime juice, vegetable broth, and yogurt/sour cream (if using) to the blender.
  • 3. Blend: Blend on high speed until completely smooth and creamy. Scrape down sides as needed.
  • 4. Season: Pour into a bowl, then taste and adjust with salt, pepper, and cumin until perfectly seasoned. Add more lime juice or broth to adjust consistency.
