  • Yield: 12 servings

Description

Master the art of this beloved Italian appetizer with perfectly toasted bread and a vibrant tomato-basil topping. An easy, flavor-packed starter that’s always a crowd-pleaser.

Ingredients

  • 68 ripe Roma (plum) tomatoes, diced
  • 1/2 cup fresh basil leaves, finely chopped
  • 3 cloves garlic, 1 minced for tomatoes, 2 whole for bread
  • 1/4 cup extra virgin olive oil, plus more for bread
  • 1 tablespoon balsamic vinegar (optional, for extra tang)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste
  • 1 crusty baguette or ciabatta loaf, sliced 1/2-inch thick

Instructions

  • Prepare Tomato Mixture: In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, 1/4 cup olive oil, balsamic vinegar (if using), salt, and pepper. Toss gently. Let sit at room temperature for at least 15-20 minutes for flavors to meld.
  • Toast the Bread: Preheat oven to 375°F (190°C). Arrange bread slices on a baking sheet. Drizzle or brush lightly with extra olive oil. Toast for 5-8 minutes, flipping halfway, until golden brown and crisp.
  • Garlic Rub: Once bread is toasted, immediately rub the cut side of the remaining whole garlic cloves over the warm surface of each slice.
  • Assemble and Serve: Spoon the tomato mixture generously over each garlic-rubbed bread slice. Serve immediately.
