Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef (80/20 or 90/10)
  • 1 packet (1 oz) taco seasoning OR homemade blend
  • 1/2 cup water or beef broth
  • 1 cup long-grain white rice
  • 2 cups chicken or beef broth (for cooking rice)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup pico de gallo or salsa
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 ripe avocado, sliced or 1/4 cup guacamole
  • Optional toppings: black beans, corn, shredded lettuce, fresh cilantro, sliced jalapeños

Instructions

  • Cook the Rice: In a medium saucepan, combine 1 cup rice with 2 cups chicken or beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all liquid is absorbed and rice is tender. Remove from heat and let rest, covered, for 5 minutes before fluffing with a fork.
  • Brown the Ground Beef: While rice cooks, heat olive oil in a large skillet over medium-high heat. Add ground beef and break it apart with a spoon. Cook until fully browned, about 8-10 minutes. Drain any excess grease.
  • Season the Beef: Stir in the taco seasoning and 1/2 cup water or beef broth with the browned ground beef. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors have melded.
  • Assemble the Bowls: Divide the cooked rice among four serving bowls. Top each with a generous portion of the seasoned ground beef.
  • Garnish and Serve: Garnish each bowl with shredded cheese, pico de gallo or salsa, sour cream or Greek yogurt, and avocado slices or guacamole. Add any desired optional toppings. Serve immediately and enjoy!
