Ingredients
- 1 (15-ounce) can black-eyed peas, rinsed and drained
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup fresh or frozen corn, thawed
- 1 red bell pepper, finely diced
- 1 yellow bell pepper, finely diced
- 1/2 red onion, finely diced
- 1 jalapeño, seeded and minced (more or less to taste)
- 1/2 cup fresh cilantro, chopped
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lime juice (from 2–3 limes)
- 2 tablespoons red wine vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
Instructions
- 1. Prepare Ingredients: Rinse and drain black-eyed peas and black beans. Dice bell peppers, red onion, and jalapeño. Mince cilantro. Thaw corn if frozen.
- 2. Combine in Bowl: In a large mixing bowl, combine the rinsed beans, corn, diced bell peppers, red onion, jalapeño, and chopped cilantro.
- 3. Whisk Dressing: In a separate small bowl, whisk together olive oil, lime juice, red wine vinegar, honey/maple syrup, cumin, chili powder, salt, and pepper until well combined.
- 4. Dress and Toss: Pour the dressing over the bean and vegetable mixture. Gently toss until all ingredients are evenly coated.
- 5. Chill: Cover the bowl and refrigerate for at least 2 hours, or ideally 4 hours, to allow flavors to meld and develop. Taste and adjust seasoning before serving.
