Ingredients

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup fresh or frozen corn, thawed
  • 1 red bell pepper, finely diced
  • 1 yellow bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced (more or less to taste)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lime juice (from 23 limes)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  • 1. Prepare Ingredients: Rinse and drain black-eyed peas and black beans. Dice bell peppers, red onion, and jalapeño. Mince cilantro. Thaw corn if frozen.
  • 2. Combine in Bowl: In a large mixing bowl, combine the rinsed beans, corn, diced bell peppers, red onion, jalapeño, and chopped cilantro.
  • 3. Whisk Dressing: In a separate small bowl, whisk together olive oil, lime juice, red wine vinegar, honey/maple syrup, cumin, chili powder, salt, and pepper until well combined.
