- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2.5 tsp Cajun seasoning, divided
- 2 tbsp olive oil, divided
- 1 medium yellow onion, chopped
- 1 green bell pepper, chopped
- 1 stalk celery, chopped
- 3 cloves garlic, minced
- 1 tbsp tomato paste
- 1.5 cups low-sodium chicken broth
- 1 cup heavy cream
- Salt and black pepper to taste
- 2 cups cooked long-grain white rice, for serving
- Fresh parsley or green onions, chopped, for garnish (optional)
- Hot sauce, for serving (optional)
Instructions
- 1. Prep and Sear the Chicken: Pat chicken dry, toss with 1 tbsp Cajun seasoning. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear chicken 3-4 mins per side until golden. Remove and set aside.
- 2. Build the Flavor Base: Reduce heat to medium. Add 1 tbsp olive oil, then onion, bell pepper, and celery. Sauté 5-7 mins until softened. Stir in minced garlic for 1 minute until fragrant. Add tomato paste and cook, stirring, for 1-2 minutes.
- 3. Deglaze and Simmer: Pour in chicken broth, scraping pan. Bring to a simmer. Stir in remaining 1.5 tsp Cajun seasoning. Reduce heat to low, cover, and simmer for 5 minutes.
- 4. The Creamy Finish: Stir in heavy cream and bring to a gentle simmer. Return chicken to the pan and warm through for 2-3 minutes. Taste and adjust seasoning.
- 5. Cook Rice and Assemble: Cook rice separately according to package directions. Serve creamy Cajun chicken and sauce over fluffy rice, garnished with parsley/green onions and hot sauce, if desired.
