Ingredients
- 1 tbsp neutral oil (like canola or vegetable)
- 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 4 cloves garlic, minced
- 1-inch piece fresh ginger, grated or minced
- 3 green onions, white and green parts separated and sliced
- 1 tbsp mirin
- 4 cups low-sodium chicken broth
- 1/4 cup soy sauce (or to taste)
- 1 cup whole milk (or full-fat coconut milk for dairy-free)
- 2 tbsp cream cheese, softened (optional, for extra creaminess)
- Salt and black pepper to taste
- 12 oz fresh or dried ramen noodles
- For Garnish (Optional):
- Soft-boiled or poached eggs
- Fresh green onion greens, sliced
- Chili oil or chili crisp
- Toasted sesame seeds
- Baby spinach or bok choy
Instructions
- Heat oil in a large pot or Dutch oven over medium-high heat. Add chicken and sear until golden brown and cooked through (5-7 mins). Remove chicken and set aside.
- Reduce heat to medium. Add white parts of green onions, minced garlic, and grated ginger. Sauté for 1-2 minutes until fragrant. Add mirin and scrape up any browned bits.
- Pour in chicken broth and soy sauce. Bring to a gentle simmer. Reduce heat to low, then whisk in milk and cream cheese (if using) until smooth and creamy. Season with salt and pepper.
- In a separate pot, cook ramen noodles according to package directions until al dente. Drain well.
- Divide cooked noodles among serving bowls. Ladle creamy broth over noodles. Top with cooked chicken and desired garnishes like soft-boiled eggs, green onion greens, and chili oil. Serve immediately.
