- 2 large sweet potatoes (about 2 lbs), scrubbed and diced into 1-inch cubes

- 1/2 cup finely grated Parmesan cheese

Instructions
- 1. Preheat Oven & Prep Sweet Potatoes: Preheat your oven to 400°F (200°C). Scrub sweet potatoes and dice into roughly 1-inch cubes.
