- 2 large Russet potatoes (about 1.5 lbs)

Instructions
- Step 1: Prep Potatoes. Wash and peel potatoes if desired. Cut into uniform 1/4 to 1/2-inch sticks.
- Step 2: Soak and Dry. Place cut potatoes in a bowl of cold water and soak for at least 30 minutes. Drain thoroughly, then pat completely dry with a clean towel.
