Description

This comforting Crockpot Cheeseburger Soup delivers all the classic flavors of a beloved cheeseburger in a rich, creamy, and satisfying bowl. Perfect for a cozy weeknight dinner with minimal effort.


Ingredients

  • 1.5 lbs ground beef (80/20 recommended)
  • 1 large yellow onion, diced
  • 2 celery stalks, diced
  • 2 medium carrots, peeled and diced
  • 45 medium potatoes, peeled and diced (about 4 cups)
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained (optional)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried mustard
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 8 oz cream cheese, softened and cubed
  • 1/2 cup heavy cream or half-and-half
  • 2 cups freshly grated sharp cheddar cheese
  • Optional toppings: cooked bacon bits, green onions, sour cream, crushed potato chips

Instructions

  • 1. Brown the ground beef in a large skillet over medium-high heat until no pink remains. Drain off any excess fat thoroughly. Transfer the browned beef to a 6-quart or larger crockpot.
  • 2. Add the diced onion, celery, carrots, and potatoes to the crockpot. Stir in the minced garlic, beef broth, diced tomatoes (if using), Worcestershire sauce, garlic powder, onion powder, dried mustard, salt, and pepper.
  • 3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the vegetables are fork-tender.
  • 4. In the last 30 minutes of cooking, stir in the softened cream cheese until it’s fully melted and combined.
  • 5. Add the heavy cream (or half-and-half) and then gradually stir in the freshly grated cheddar cheese until it’s completely melted and the soup is smooth and creamy. Do not boil after adding the cheese.
  • 6. Taste and adjust seasonings as needed. Ladle into bowls and serve with your favorite toppings.
