A comforting and easy slow cooker recipe for creamy chicken and wild rice soup, perfect for busy weeknights. It’s packed with flavor, tender chicken, and hearty wild rice.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 large yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup wild rice blend, rinsed
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 bay leaf
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 1/2 cup half-and-half (or heavy cream)
- 1 tbsp all-purpose flour or cornstarch (for thickening, optional)
- Fresh parsley or chives for garnish (optional)
Instructions
- Add chicken breasts, diced onion, carrots, celery, rinsed wild rice blend, chicken broth, dried thyme, bay leaf, salt, and pepper to the slow cooker.
- Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is tender and wild rice is cooked.
- Remove chicken and shred with two forks. Discard bay leaf.
- In a small bowl, whisk half-and-half with flour/cornstarch until smooth. Stir into soup.
- Return shredded chicken to the pot. Stir well and cook on HIGH for another 15-20 minutes to thicken.
- Taste and adjust seasonings. Serve hot, garnished with fresh herbs if desired.
