Ingredients

  • 1 (8 to 16 ounce) wheel of brie cheese
  • 1 sheet (14 ounces) frozen puff pastry, thawed
  • 1/4 cup jam (fig, apricot, or raspberry recommended), or desired savory filling
  • 1/4 cup toasted nuts (pecans, walnuts, or almonds), optional
  • 1 large egg
  • 1 tablespoon water or milk
  • Flour, for dusting

Instructions

  • 1. Prepare and Preheat: Thaw puff pastry. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Lightly flour your work surface.
  • 2. Prep Pastry: Unroll puff pastry onto the floured surface. Gently roll slightly if needed to ensure it’s large enough to encase the brie.
  • 3. Assemble: Place brie in the center of the pastry. Spread desired jam or filling over the top of the brie. Sprinkle with nuts, if using.
  • 4. Fold and Seal: Bring pastry edges up and over the brie, gathering and pinching seams firmly to seal completely. Trim excess pastry, ensuring a secure seal. Place seam-side down on the prepared baking sheet.
  • 5. Egg Wash and Score: Whisk egg with water/milk to create an egg wash. Brush generously over the entire pastry. Make a few shallow decorative scores on top with a sharp knife.
  • 6. Bake: Bake for 20-25 minutes, or until pastry is golden brown and puffed, and cheese is molten. Let rest 5-10 minutes before serving warm with crackers or fruit.
