- 1 cup fresh dandelion yellow petals (from about 2 cups dandelion heads)
- 1 cup granulated sugar
- 4 cups filtered water (divided)
- 1 to 1.5 cups fresh lemon juice (from 6–8 medium lemons)
- Optional: Fresh mint sprigs or thin ginger slices
Instructions
- Prepare Dandelions: Carefully pluck all yellow petals from the dandelion heads, discarding any green parts. You should have roughly 1 cup of clean petals.
- Make Dandelion Simple Syrup: In a saucepan, combine 2 cups of water and sugar. Heat until sugar dissolves. Remove from heat, stir in dandelion petals (and optional mint/ginger), and let steep for 30 minutes to 2 hours. Strain and discard petals.
- Juice Lemons: Squeeze fresh lemons to yield 1 to 1.5 cups of juice. Strain to remove pulp and seeds.
- Combine and Chill: In a large pitcher, mix the dandelion simple syrup, fresh lemon juice, and remaining 2 cups of water. Stir well, taste, and adjust sweetness/tartness if needed. Refrigerate for at least 1 hour until thoroughly chilled before serving.
