  • Yield: 8-10 servings

Description

Unlock the secret to a perfect, bubbly strawberry filling topped with a tender, golden biscuit crust. This easy recipe brings classic Southern comfort to your table.

Ingredients

  • 6 cups fresh strawberries, hulled and sliced
  • ½ cup granulated sugar (for filling)
  • 2 tbsp light brown sugar (for filling)
  • 3 tbsp cornstarch or all-purpose flour
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 ½ cups all-purpose flour (for topping)
  • ½ cup granulated sugar (for topping)
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup (1 stick) unsalted butter, cold and cubed
  • ¾ cup whole milk or buttermilk
  • 1 tsp vanilla extract

Instructions

  • Step 1: Prepare Strawberry Filling: In a large bowl, combine sliced strawberries, ½ cup granulated sugar, brown sugar, cornstarch (or flour), lemon zest, and lemon juice. Toss gently and let sit for 10-15 minutes.
  • Step 2: Prepare Cobbler Topping: In a separate bowl, whisk together 1½ cups flour, ½ cup granulated sugar, baking powder, baking soda, and salt. Cut in cold butter until crumbly with pea-sized pieces. Stir in milk/buttermilk and vanilla until just combined (do not overmix).
  • Step 3: Assemble Cobbler: Pour strawberry mixture into a 9×13 inch baking dish. Drop spoonfuls of topping over the strawberries, leaving some gaps.
  • Step 4: Bake: Preheat oven to 375°F (190°C). Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly and thick. Serve warm.
