Ingredients
- 1 tbsp olive oil or vegetable oil
- 1 cup small shell pasta (conchas)
- 3–4 Roma tomatoes, chopped
- 1/2 small white onion, roughly chopped
- 2 cloves garlic
- 4 cups low-sodium chicken broth (or vegetable broth for vegetarian)
- 1/2 tsp ground cumin
- Salt and freshly ground black pepper to taste
- Optional garnishes: avocado slices, crumbled Cotija cheese, fresh cilantro, lime wedges, sour cream, hot sauce
Instructions
- Step 1: Toast the Conchas. Heat oil in a large pot over medium heat. Add pasta and toast, stirring, until golden brown (3-5 mins). Remove pasta and set aside.
- Step 2: Blend the Tomato Base. In a blender, combine chopped tomatoes, onion, garlic, and 1/2 cup of chicken broth. Blend until smooth.
- Step 3: Simmer the Sauce. Pour blended tomato mixture into the same pot. Simmer for 5-7 minutes, stirring, until sauce deepens in color and thickens slightly.
- Step 4: Combine and Cook. Add remaining 3.5 cups chicken broth, toasted pasta, cumin, salt, and pepper to the pot. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is tender. Stir occasionally.
- Step 5: Finishing Touches. Taste and adjust seasonings. Add more broth if a thinner consistency is desired. Serve hot with your favorite garnishes.
