Ingredients
- 4 cups cubed watermelon (seedless or seeds removed)
- 2–3 large ripe but firm peaches, pitted and sliced or cubed
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint or basil leaves, roughly chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon honey (or maple syrup for vegan)
- Pinch of salt
- Optional: 2 tablespoons slivered almonds or pecans, lightly toasted
Instructions
- Prepare Fruit: Wash peaches and watermelon. Cut peaches into bite-sized wedges or cubes. Cut watermelon into similar-sized cubes, removing any seeds.
- Combine Salad Base: In a large bowl, gently combine the prepared peach and watermelon pieces. Add the crumbled feta cheese and chopped fresh mint or basil. Toss gently.
- Make Dressing: In a small bowl, whisk together the fresh lime juice, honey, and a pinch of salt until well combined.
- Dress and Serve: Just before serving, pour the dressing over the fruit mixture. Toss gently to coat. If using, sprinkle with toasted nuts. Serve immediately.
