  • Total Time: 10 minutes
  • Yield: 4 servings

Description

Discover how to make a refreshing and fresh cucumber snack with this easy step-by-step guide. Perfect for a light bite with best flavor and hydrating crunch!

Ingredients

  • 2 English or 4 Persian cucumbers
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon toasted sesame oil (or light olive oil)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon granulated sugar (or honey/maple syrup)
  • 1 clove garlic, minced
  • Optional: Pinch of red pepper flakes
  • Optional: Toasted sesame seeds for garnish
  • Optional: Fresh cilantro or dill for garnish

Instructions

  • Wash cucumbers thoroughly. If using larger cucumbers, you may peel and deseed. Slice thinly into rounds, half-moons, or spears.
  • In a small bowl, whisk together rice vinegar, toasted sesame oil, soy sauce, sugar, minced garlic, and optional red pepper flakes to create the dressing.
  • Place sliced cucumbers into a medium mixing bowl. Pour the dressing over the cucumbers and toss gently until all slices are evenly coated.
  • Cover the bowl and refrigerate for at least 15-30 minutes to allow the flavors to meld and the cucumbers to chill thoroughly.
  • Before serving, give the snack another gentle toss. Garnish with toasted sesame seeds or fresh herbs if desired.
