Ingredients
- 2 English or 4 Persian cucumbers
- 2 tablespoons rice vinegar (or apple cider vinegar)
- 1 tablespoon toasted sesame oil (or light olive oil)
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon granulated sugar (or honey/maple syrup)
- 1 clove garlic, minced
- Optional: Pinch of red pepper flakes
- Optional: Toasted sesame seeds for garnish
- Optional: Fresh cilantro or dill for garnish
Instructions
- Wash cucumbers thoroughly. If using larger cucumbers, you may peel and deseed. Slice thinly into rounds, half-moons, or spears.
- In a small bowl, whisk together rice vinegar, toasted sesame oil, soy sauce, sugar, minced garlic, and optional red pepper flakes to create the dressing.
- Place sliced cucumbers into a medium mixing bowl. Pour the dressing over the cucumbers and toss gently until all slices are evenly coated.
- Cover the bowl and refrigerate for at least 15-30 minutes to allow the flavors to meld and the cucumbers to chill thoroughly.
- Before serving, give the snack another gentle toss. Garnish with toasted sesame seeds or fresh herbs if desired.
