These vibrant, easy-to-make pinwheels feature creamy hummus and crisp vegetables rolled in soft tortillas. They’re the ultimate portable snack for picnics or any grab-and-go meal.
Ingredients
- 4–6 large (10–12 inch) flour tortillas
- 1 cup hummus (store-bought or homemade)
- 1/2 cup finely diced cucumber
- 1/2 cup finely diced red bell pepper
- 1/4 cup grated or julienned carrot
- 1 cup packed spinach or arugula, finely chopped
- 2 tbsp fresh parsley, chopped
- 1 tsp lemon juice
- Black pepper, to taste
- Optional: 1 tsp Everything Bagel seasoning
Instructions
- Lay a tortilla flat on a clean surface.
- Spread 2-3 tablespoons of hummus evenly over the entire tortilla, leaving a 1/2-inch border along one edge.
- Evenly sprinkle the finely diced cucumber, red bell pepper, grated carrot, and chopped spinach/arugula over the hummus.
- Sprinkle with fresh parsley, lemon juice, black pepper, and optional Everything Bagel seasoning.
- Starting from the side opposite the border, tightly roll the tortilla.
- Wrap the rolled tortilla tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes (up to 2 hours) to firm up.
- Once chilled, unwrap and slice the roll into 1-inch thick pinwheels using a sharp, serrated knife.
- Serve immediately or store in an airtight container in the refrigerator.
