Description

These vibrant, easy-to-make pinwheels feature creamy hummus and crisp vegetables rolled in soft tortillas. They’re the ultimate portable snack for picnics or any grab-and-go meal.


Ingredients

  • 46 large (1012 inch) flour tortillas
  • 1 cup hummus (store-bought or homemade)
  • 1/2 cup finely diced cucumber
  • 1/2 cup finely diced red bell pepper
  • 1/4 cup grated or julienned carrot
  • 1 cup packed spinach or arugula, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon juice
  • Black pepper, to taste
  • Optional: 1 tsp Everything Bagel seasoning

Instructions

  • Lay a tortilla flat on a clean surface.
  • Spread 2-3 tablespoons of hummus evenly over the entire tortilla, leaving a 1/2-inch border along one edge.
  • Evenly sprinkle the finely diced cucumber, red bell pepper, grated carrot, and chopped spinach/arugula over the hummus.
  • Sprinkle with fresh parsley, lemon juice, black pepper, and optional Everything Bagel seasoning.
  • Starting from the side opposite the border, tightly roll the tortilla.
  • Wrap the rolled tortilla tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes (up to 2 hours) to firm up.
  • Once chilled, unwrap and slice the roll into 1-inch thick pinwheels using a sharp, serrated knife.
  • Serve immediately or store in an airtight container in the refrigerator.
