  • ½ cup pitted Kalamata olives, roughly chopped
  • ¼ cup fresh flat-leaf parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon fresh mint, chopped
  • ¼ cup extra virgin olive oil, plus more for brushing bread
  • 2 tablespoons red wine vinegar
  • 23 cloves garlic, peeled, for rubbing
  • 4 oz block feta cheese, crumbled
  • Salt and freshly ground black pepper to taste

Instructions

  • Prepare the Topping: In a medium bowl, combine diced tomatoes, cucumbers, red onion, chopped olives, parsley, oregano, and mint. Drizzle with ¼ cup olive oil and red wine vinegar. Season with salt and pepper. Stir gently and let sit for 15-20 minutes.
  • Toast the Bread: Preheat oven to 375°F (190°C). Brush both sides of bread slices with olive oil. Arrange on a baking sheet and toast for 8-12 minutes, flipping halfway, until golden and crispy.
