Ingredients
- 1 crusty baguette or ciabatta loaf, sliced ½-inch thick
- 3–4 ripe Roma tomatoes, finely diced
- 1 English or 2 Persian cucumbers, finely diced
- ½ small red onion, finely diced (mellowed if desired)
- ½ cup pitted Kalamata olives, roughly chopped
- ¼ cup fresh flat-leaf parsley, chopped
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon fresh mint, chopped
- ¼ cup extra virgin olive oil, plus more for brushing bread
- 2 tablespoons red wine vinegar
- 2–3 cloves garlic, peeled, for rubbing
- 4 oz block feta cheese, crumbled
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the Topping: In a medium bowl, combine diced tomatoes, cucumbers, red onion, chopped olives, parsley, oregano, and mint. Drizzle with ¼ cup olive oil and red wine vinegar. Season with salt and pepper. Stir gently and let sit for 15-20 minutes.
- Toast the Bread: Preheat oven to 375°F (190°C). Brush both sides of bread slices with olive oil. Arrange on a baking sheet and toast for 8-12 minutes, flipping halfway, until golden and crispy.
- Garlic Infuse: While bread is still warm, rub the cut side of a raw garlic clove over the surface of each toasted slice.
- Assemble: Arrange garlic-rubbed toast on a platter. Spoon generous amounts of the topping onto each slice. Crumble feta cheese over the top. Serve immediately.
