This vibrant salad combines warm, smoky grilled peaches with juicy blueberries, crisp greens, and a tangy vinaigrette. It’s a perfect blend of sweet, tart, and savory, ideal for a refreshing summer meal.
Ingredients
- 2 ripe but firm peaches, halved or cut into thick wedges
- 1 tbsp olive oil (for peaches)
- 5 oz (140g) mixed spring greens or baby spinach
- 1 cup fresh blueberries
- 1/4 cup crumbled feta, goat cheese, or grilled Halloumi
- 1/4 cup toasted pecans or walnuts, chopped
- For the Vinaigrette:
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (or white balsamic)
- 1 tsp honey or maple syrup
- 1/2 tsp Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your grill or grill pan to medium-high heat. Lightly brush peach halves/wedges with 1 tbsp olive oil.
- Place peaches cut-side down on the grill. Cook for 2-4 minutes per side, until grill marks appear and peaches are slightly softened and caramelized. Remove and let cool slightly.
- In a large salad bowl, combine mixed greens and fresh blueberries.
- Prepare the vinaigrette: In a small bowl or jar, whisk together 3 tbsp extra virgin olive oil, balsamic vinegar, honey/maple syrup, Dijon mustard, salt, and pepper until emulsified.
- Arrange grilled peaches over the greens and blueberries. Crumble cheese over the top and scatter toasted nuts.
- Drizzle the vinaigrette over the salad just before serving. Toss gently to combine and serve immediately.
