Description

This vibrant salad combines warm, smoky grilled peaches with juicy blueberries, crisp greens, and a tangy vinaigrette. It’s a perfect blend of sweet, tart, and savory, ideal for a refreshing summer meal.


Ingredients

  • 2 ripe but firm peaches, halved or cut into thick wedges
  • 1 tbsp olive oil (for peaches)
  • 5 oz (140g) mixed spring greens or baby spinach
  • 1 cup fresh blueberries
  • 1/4 cup crumbled feta, goat cheese, or grilled Halloumi
  • 1/4 cup toasted pecans or walnuts, chopped
  • For the Vinaigrette:
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (or white balsamic)
  • 1 tsp honey or maple syrup
  • 1/2 tsp Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  • Preheat your grill or grill pan to medium-high heat. Lightly brush peach halves/wedges with 1 tbsp olive oil.
  • Place peaches cut-side down on the grill. Cook for 2-4 minutes per side, until grill marks appear and peaches are slightly softened and caramelized. Remove and let cool slightly.
  • In a large salad bowl, combine mixed greens and fresh blueberries.
  • Prepare the vinaigrette: In a small bowl or jar, whisk together 3 tbsp extra virgin olive oil, balsamic vinegar, honey/maple syrup, Dijon mustard, salt, and pepper until emulsified.
  • Arrange grilled peaches over the greens and blueberries. Crumble cheese over the top and scatter toasted nuts.
  • Drizzle the vinaigrette over the salad just before serving. Toss gently to combine and serve immediately.
