This comforting Hearty Hamburger Stroganoff features tender ground beef in a rich, creamy sauce, served over classic egg noodles. It’s a quick and satisfying meal perfect for any night of the week.
Ingredients
- 1 tablespoon olive oil
- 1 ½ pounds ground beef (80/20 chuck recommended)
- 1 large yellow onion, diced
- 8 ounces cremini mushrooms, sliced
- 3 cloves garlic, minced
- ¼ cup all-purpose flour
- 3 cups beef broth (low sodium)
- 1 teaspoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper, or to taste
- ¾ cup full-fat sour cream
- 12 ounces wide egg noodles, cooked according to package directions
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Brown the Beef: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until fully browned. Drain off most of the fat, leaving about 1-2 tablespoons in the pan.
- Sauté Aromatics: Add diced onion to the skillet and cook until softened, about 5-7 minutes. Add sliced mushrooms and cook until they release their liquid and start to brown, 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Build the Sauce: Sprinkle flour over the beef and vegetable mixture. Cook, stirring constantly, for 1-2 minutes. Gradually whisk in beef broth, then stir in Dijon mustard and Worcestershire sauce. Bring to a gentle simmer.
- Simmer & Cook Noodles: Reduce heat to low, cover, and simmer for 15-20 minutes, allowing the sauce to thicken and flavors to meld. While simmering, cook egg noodles according to package directions until al dente. Drain well.
- Finish & Serve: Remove skillet from heat. In a small bowl, whisk a spoonful of the hot sauce into the sour cream to temper it. Gently stir tempered sour cream into the skillet until combined. Season with salt and pepper to taste. Serve immediately over cooked egg noodles, garnished with fresh parsley if desired.
