Ingredients
- 4 large eggs
- 1 tbsp olive oil or avocado oil
- 1/4 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 1 small jalapeño or serrano pepper, finely diced (seeds removed for less heat)
- 1/2 medium tomato, diced
- 1/4 tsp salt, plus more to taste
- 1/8 tsp black pepper, plus more to taste
- 2 tbsp fresh cilantro, chopped
- 2 tbsp shredded cheese (Cotija, cheddar, or Monterey Jack), optional
Instructions
- 1. Prep Vegetables: Finely dice onion, jalapeño, and tomato. Mince garlic. Chop cilantro.
- 2. Sauté Aromatics: Heat oil in a non-stick skillet over medium. Sauté onion for 3-5 minutes until translucent. Add garlic and jalapeño; cook 1-2 minutes until fragrant.
- 3. Add Tomatoes & Season: Stir in diced tomatoes, cook 2-3 minutes until softened. Season with salt and pepper.
- 4. Whisk & Add Eggs: Whisk eggs with a pinch of salt and pepper. Pour into skillet. Let set for 30 seconds, then gently push cooked portions, allowing raw egg to flow. Continue until eggs are mostly set but still moist.
- 5. Finish: Remove from heat. Fold in cheese (if using) until melted, then stir in fresh cilantro. Serve immediately.
