Ingredients
- 1 tbsp olive oil
- 1 lb lean ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (any color), diced
- 2 tbsp taco seasoning (store-bought or homemade)
- ¼ cup water or broth
- 4 cups shredded romaine or iceberg lettuce
- 2 cups shredded green cabbage (optional)
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved, or 1 Roma tomato, diced
- ½ cup corn (canned, frozen, or fresh)
- ½ cup black beans, rinsed and drained
- ¼ cup fresh cilantro, chopped
- ½ cup plain Greek yogurt or sour cream (for topping)
- Lime wedges (for serving)
- Optional: Cooked quinoa, brown rice, or cauliflower rice for extra heartiness
Instructions
- Prep Your Ingredients: Dice onion, mince garlic, chop bell pepper, shred lettuce and cabbage. Prepare all toppings: dice avocado, halve tomatoes, drain corn and beans, chop cilantro.
- Cook the Protein: Heat olive oil in a large skillet over medium-high heat. Add ground meat, breaking it up, and cook until browned (5-7 minutes). Drain excess fat. Add onion, garlic, and bell pepper; sauté until softened (5-7 minutes). Stir in taco seasoning and ¼ cup water/broth. Simmer for 2-3 minutes until liquid is absorbed and flavors meld.
- Assemble Your Bowls: Divide shredded lettuce and cabbage among 4 serving bowls. Spoon warm taco meat over the greens. If using, add a scoop of cooked grains to each bowl.
- Add Your Toppings: Arrange diced avocado, tomatoes, corn, and black beans around the meat and greens. Dollop with Greek yogurt or sour cream. Garnish generously with fresh cilantro and a squeeze of fresh lime juice. Serve immediately.
