Ingredients
- 4 (6oz) salmon fillets, skin-on or off
- 1/2 cup crushed pineapple, drained (canned in juice or fresh, finely minced)
- 1/4 cup honey
- 3 tbsp low-sodium soy sauce (or tamari for gluten-free)
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp fresh lime juice
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp olive oil or avocado oil (for searing)
- Salt and freshly ground black pepper to taste
- Fresh cilantro or green onions, chopped (for garnish, optional)
Instructions
- 1. Prep the Salmon: Pat salmon fillets very dry with paper towels. Season lightly with salt and pepper.
- 2. Whisk the Glaze: In a bowl, combine drained crushed pineapple, honey, soy sauce, minced garlic, grated ginger, and red pepper flakes (if using). Whisk until well combined.
- 3. Sear (Optional): Heat oil in an oven-safe skillet over medium-high heat. Sear salmon, skin-side down if applicable, for 3-4 minutes until crispy. Flip. (If not searing, place salmon directly in a lightly oiled baking dish.)
- 4. Bake: Preheat oven to 400°F (200°C). Brush a generous amount of glaze over the salmon. Bake for 10-15 minutes, or until salmon flakes easily and reaches desired doneness (125-130°F internal temp).
- 5. Finish & Serve: Remove from oven. Brush with any remaining glaze. Squeeze fresh lime juice over each fillet. Garnish with cilantro or green onions, if desired, and serve immediately.
