Discover the best flavor of Lemon Blueberry Cheesecake Cookies with this easy-to-bake, step-by-step recipe. Perfect for any occasion, these cookies are a delightful blend of tart lemon, sweet blueberries, and creamy cheesecake.

Ingredients

  • For the Cookie Dough:
  • 1 ½ cups (180g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ¼ cup (50g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 large egg yolk
  • 1 tablespoon lemon zest (from 1 large lemon)
  • ½ teaspoon vanilla extract
  • For the Cheesecake Filling:
  • 8 ounces (226g) full-fat cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon vanilla extract
  • ½ cup (75g) fresh blueberries (or frozen, not thawed)

Instructions

  • 1. Prepare the Cookie Dough: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes). Beat in 1 egg yolk, lemon zest, and ½ tsp vanilla. Gradually add dry ingredients to wet, mixing on low until just combined. Do not overmix.
  • 2. Make the Cheesecake Filling: In a separate bowl, beat softened cream cheese with ¼ cup granulated sugar and 1 egg yolk until smooth. Stir in lemon juice and ¼ tsp vanilla extract until well combined.
  • 3. Assemble the Cookies: Scoop about 1.5 tablespoons of cookie dough per cookie. Roll into balls and place on a parchment-lined baking sheet. Using your thumb or the back of a small spoon, create a deep well in the center of each dough ball. Spoon 1-2 teaspoons of cheesecake filling into each well. Top each with a few blueberries.
  • 4. Bake: Preheat oven to 375°F (190°C). Bake for 12-15 minutes, or until cookie edges are lightly golden and the cheesecake filling is set and slightly puffed. The center may still look soft.
  • 5. Cool: Let cookies cool on the baking sheet for 5-10 minutes, then transfer to a wire rack to cool completely. This is crucial for the filling to set.
