Ingredients

  • 1 tbsp olive oil
  • 1 lb lean ground beef (90/10 or 93/7)
  • 1 packet (1 oz) taco seasoning OR 2 tbsp homemade blend
  • 1/2 cup water or beef broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup uncooked rice (Jasmine, Basmati, or brown)
  • 2 cups water (for rice)
  • Salt to taste
  • For Toppings (store separately):
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/2 avocado, diced
  • 1/4 red onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup salsa (chunky or smooth)
  • 1/2 cup sour cream or plain Greek yogurt
  • Lime wedges, for serving

Instructions

  • Cook the Rice: Rinse rice thoroughly. Combine rice, 2 cups water, and a pinch of salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 mins (white rice) or 40-45 mins (brown rice). Remove from heat, let steam covered for 10 mins. Fluff with a fork and cool completely.
  • Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef, breaking it up, and cook until fully browned (7-8 mins). Drain any excess grease if necessary.
  • Build the Taco Meat: Reduce heat to medium. Stir in taco seasoning and 1/2 cup water/broth. Simmer for 5-7 minutes, allowing flavors to meld. Stir in rinsed black beans and cook for another 2-3 minutes to heat through. Cool completely.
  • Assemble Your Bowls: Divide cooled rice into 4 meal prep containers. Top each with an even portion of the cooled taco meat and black bean mixture.
  • Prepare Toppings Separately: Store shredded cheese, diced avocado, red onion, cilantro, salsa, and sour cream/Greek yogurt in separate small airtight containers or bags. Assemble just before eating.
  • Store & Reheat: Refrigerate assembled bowls (without fresh toppings) for up to 3-4 days. To reheat, microwave (loosely covered) for 1-2 minutes, or heat on stovetop until warmed through. Add fresh toppings and a squeeze of lime before serving.
