Ingredients
- 4 ripe nectarines, pitted and chopped
- 2 cups full-fat plain Greek yogurt
- 2–4 tablespoons honey, maple syrup, or granulated sugar (to taste)
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract (optional)
- Pinch of salt (optional)
Instructions
- 1. Prepare Nectarines: Wash, pit, and chop nectarines. For enhanced flavor, lightly macerate with 1 tbsp sugar for 15-20 minutes, or roast at 375°F (190°C) for 10-15 minutes until softened.
- 2. Blend Base: Combine prepared nectarines, Greek yogurt, sweetener, lemon juice, and optional vanilla/salt in a blender. Blend until completely smooth and creamy. Taste and adjust sweetness.
- 3. Chill Mixture: Pour mixture into an airtight container and refrigerate for 2-4 hours, or overnight, to thoroughly chill and develop flavors.
- 4. Churn or Freeze: If using an ice cream maker, churn according to manufacturer’s instructions until soft-serve consistency. For no-churn, pour into a shallow freezer-safe container. Freeze for 1.5-2 hours, then stir/blend vigorously. Repeat every 45-60 minutes for 3-4 times.
- 5. Final Freeze: Transfer to an airtight container. Press plastic wrap directly onto the surface. Freeze for another 2-4 hours, or until firm. Let sit at room temperature for 5-10 minutes before scooping and serving.
