- For the Donut Base:
- 1 ½ cups cake flour
- ¾ cup granulated sugar

- 4 oz full-fat cream cheese, softened
- ½ cup powdered sugar

- For the Peach Topping:
- 1 cup diced peaches (fresh or canned, drained)
- 2 tbsp brown sugar
- 1 tsp cornstarch
- ¼ tsp ground cinnamon
- ⅛ tsp ground nutmeg
- For the Cobbler Topping:
- ½ cup all-purpose flour
- ¼ cup brown sugar
- ¼ cup cold unsalted butter, cubed
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
Instructions
- Prepare the Cobbler Topping: In a small bowl, combine flour, brown sugar, cinnamon, and nutmeg. Cut in cold butter until coarse crumbs form. Chill in the refrigerator.
- Make the Cheesecake Filling: Beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla, beating until creamy. Transfer to a piping bag and set aside.
- Prepare Donut Batter: Preheat oven to 350°F (175°C) and grease a donut pan. Whisk dry ingredients (cake flour, granulated sugar, baking powder, baking soda, salt) in a large bowl. In a separate bowl, whisk wet ingredients (milk, melted butter, egg, vanilla). Combine wet and dry ingredients until just mixed, do not overmix.
- Bake Donuts: Spoon or pipe batter into donut pan, filling two-thirds full. Bake for 10-12 minutes until golden and springy. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
- Assemble Donuts: Once cooled, carefully create a small well in the center of each donut with a paring knife. Pipe cheesecake filling into each well.
- Finish Topping: In a small saucepan, combine peaches, brown sugar, cornstarch, cinnamon, and nutmeg. Cook over medium heat until peaches are tender and sauce thickens (5-7 mins). Let cool slightly. Spoon peach topping over cheesecake filling on each donut, then sprinkle with chilled cobbler crumble.
