Ingredients
- 1/2 cup (113g) unsalted butter
- 4 ounces (113g) unsweetened chocolate, chopped
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup (90g) all-purpose flour
- 1/4 cup (22g) unsweetened natural cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1 cup (170g) chocolate chips or chunks (optional)
- 1 teaspoon flaky sea salt, for sprinkling
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
- Melt butter and unsweetened chocolate together in a heatproof bowl set over simmering water or in the microwave. Stir until smooth, then set aside to cool slightly.
- In a large bowl, whisk together granulated sugar, brown sugar, and eggs until light and aerated, about 2-3 minutes.
- Pour the slightly cooled chocolate mixture into the egg mixture and whisk until just combined.
- In a separate small bowl, whisk together flour, cocoa powder, baking powder, and fine sea salt.
- Add the dry ingredients to the wet ingredients and fold gently with a spatula until just combined. Do not overmix.
- If using, fold in the chocolate chips or chunks.
- Using a 2-tablespoon cookie scoop, drop dough onto prepared baking sheets, leaving 2 inches between cookies. Sprinkle each dough ball generously with flaky sea salt.
- Bake for 10-12 minutes, rotating halfway through, until edges are set and centers still look slightly soft.
- Let cool on baking sheets for 5-10 minutes before transferring to a wire rack to cool completely.
