Ingredients

  • 1 (9-inch) store-bought pie crust or homemade shortcrust pastry
  • 2 (8-ounce) packages full-fat cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon zest
  • 1/4 cup sour cream or Greek yogurt (optional)
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
  • Powdered sugar for dusting (optional)
  • Fresh mint for garnish (optional)

Instructions

  • 1. Prepare and Bake the Crust: Preheat oven to 375°F (190°C). Press pie crust into a 9-inch tart pan with a removable bottom. Prick bottom with a fork, line with parchment paper, fill with pie weights, and blind bake for 15-20 minutes. Remove weights/parchment, bake another 5-10 minutes until lightly golden. Cool completely.
  • 2. Make the Cream Cheese Filling: Reduce oven temperature to 350°F (175°C). In a large bowl, beat softened cream cheese until smooth. Gradually beat in sugar until fluffy. Beat in eggs one at a time, then vanilla, lemon zest, and sour cream/yogurt (if using). Mix until just combined.
  • 3. Assemble the Tart: Pour the cream cheese filling into the cooled, pre-baked tart shell. Arrange mixed berries artfully on top of the filling.
  • 4. Bake and Chill: Bake for 35-45 minutes, or until edges are set but the center still has a slight jiggle. Cool completely on a wire rack for 2-3 hours, then refrigerate for at least 2-4 hours (or overnight) until fully set before slicing and serving.
  • 5. Garnish and Serve: Dust with powdered sugar and garnish with fresh mint leaves, if desired.
