Ingredients

  • 1 lb lean ground beef (90/10 or 93/7)
  • 1 packet (1 oz) taco seasoning
  • 1/4 cup water
  • 6 cups iceberg or romaine lettuce, chopped
  • 1 cup cherry or Roma tomatoes, diced
  • 1/2 cup red onion, finely diced
  • 1 cup shredded cheddar or Mexican blend cheese
  • 3 cups (about 5 oz) Doritos Nacho Cheese, crushed
  • 1/2 cup Catalina or French dressing
  • Optional: 1 can (15 oz) black beans, rinsed and drained
  • Optional: 1/2 cup corn (fresh or frozen, thawed)
  • Optional: 1 avocado, diced

Instructions

  • Step 1: Cook the Beef. In a large skillet, brown ground beef over medium-high heat, breaking it apart with a spoon, until no pink remains. Drain any excess grease. Return beef to skillet, stir in taco seasoning and water. Simmer for 5-7 minutes, until liquid is absorbed and beef is well-seasoned. Set aside to cool slightly.
  • Step 2: Prep Veggies. While beef cools, chop lettuce, dice tomatoes, and mince red onion. Prepare any optional add-ins like black beans, corn, or avocado.
  • Step 3: Crush Doritos. Place Doritos in a large ziplock bag and gently crush into bite-sized pieces; avoid making them a powder.
  • Step 4: Assemble. In a large serving bowl, layer the chopped lettuce, followed by the seasoned ground beef, then the diced tomatoes and onions, and finally the shredded cheese.
  • Step 5: Dress and Serve. Just before serving, add the crushed Doritos and Catalina or French dressing to the salad. Toss gently to combine all ingredients. Serve immediately to ensure maximum crunch and freshness.
