Ingredients
- 1.5 lbs 80/20 ground chuck
- 8–10 6-inch flour tortillas
- 8–10 slices American cheese
- 1/2 head iceberg lettuce, shredded
- 1/4 red onion, finely diced
- 1/2 cup dill pickle slices or relish
- Salt and freshly ground black pepper, to taste
- 1 tbsp high-temp cooking oil (e.g., avocado, grapeseed)
- For the Special Sauce:
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp dill pickle relish (or finely minced pickles)
- 1/2 tsp hot sauce (optional)
Instructions
- Prepare Beef Balls: Gently divide ground beef into 2-ounce balls (about 8-10). Do not overwork the meat.
- Make Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle relish, and hot sauce (if using). Set aside.
- Heat Pan: Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot and smoking slightly. Add 1/2 tbsp of cooking oil.
- Smash and Sear: Place 1-2 beef balls in the hot pan (do not overcrowd). Immediately place a piece of parchment paper or foil over each ball and firmly smash it down with a sturdy spatula until very thin (1/8-1/4 inch thick). Season generously with salt and pepper.
- Cook Patties: Cook for 60-90 seconds until a deep brown, crispy crust forms on the bottom.
- Add Cheese: Flip the patties. Immediately place a slice of American cheese on top of each. Cover the pan (or tent with a metal bowl) for 20-30 seconds to help the cheese melt. Remove patties from the pan.
- Warm Tortillas: While cooking patties, quickly warm tortillas in the same pan, over a gas flame, or in the microwave until soft and pliable.
- Assemble Tacos: Place a cheesy smash burger patty on each warm tortilla. Drizzle generously with special sauce, then top with shredded lettuce, diced red onion, and dill pickles.
- Serve: Fold or roll up the tacos and serve immediately. Repeat for remaining beef balls and tortillas.
