Ingredients
- 12 oz (approx. 340g) pasta (fusilli, rotini, or penne recommended)
- 1 red bell pepper, finely chopped
- 2 carrots, shredded or finely diced
- 1/2 English cucumber, finely diced
- 4 green onions/scallions, thinly sliced (divided)
- 1/4 cup fresh cilantro, chopped (divided)
- 1/2 cup creamy peanut butter (natural, unsweetened preferred)
- 1/4 cup low-sodium soy sauce (or tamari for GF)
- 3 tablespoons fresh lime juice
- 2 tablespoons honey or maple syrup
- 1 tablespoon toasted sesame oil
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- 1–2 teaspoons Sriracha or chili garlic sauce (to taste)
- 3–5 tablespoons water (for thinning dressing)
- Optional: chopped peanuts for garnish
Instructions
- 1. Cook Pasta: Cook pasta according to package directions until al dente. Drain and rinse thoroughly under cold water. Set aside.
- 2. Make Dressing: In a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, ginger, garlic, Sriracha, and 3 tablespoons of water until smooth. Add more water, 1 tablespoon at a time, until desired consistency is reached. Taste and adjust seasonings.
- 3. Chop Veggies: Finely chop bell pepper, carrots, cucumber, and half of the green onions and cilantro.
- 4. Combine Ingredients: In a large bowl, combine cooled pasta, chopped vegetables, and half of the green onions and cilantro. Pour dressing over the mixture.
- 5. Toss and Chill: Toss gently until all ingredients are evenly coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- 6. Serve: Garnish with remaining green onions, cilantro, and chopped peanuts (if using) before serving.
