Description

Indulge in this ultimate comfort food bowl featuring perfectly seared steak strips and impossibly crispy oven-baked fries. It’s a satisfying and easy weeknight meal that’s bursting with flavor and texture.


Ingredients

  • 1 lb sirloin, flank, or skirt steak
  • 2 large Russet potatoes OR 18 oz frozen extra crispy fries
  • 2 tbsp olive oil, divided
  • 1 tsp cornstarch (if using fresh potatoes)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp kosher salt, plus more for fries
  • 1/2 tsp black pepper, plus more for fries
  • Optional: Fresh parsley or chives for garnish, favorite sauces (aioli, peppercorn, chimichurri)

Instructions

  • Prep Fresh Fries (if using): Peel and cut potatoes into 1/4 to 1/2-inch sticks. Soak in cold water 30 mins, drain, pat very dry. Toss with 1 tbsp olive oil, 1 tsp cornstarch, salt, and pepper. Spread on parchment-lined baking sheet.
  • Bake Fries: Preheat oven to 425°F (220°C). If using frozen, toss with 1 tsp olive oil, salt, pepper; spread on parchment. Bake 20-35 mins, flipping halfway, until golden and crispy.
  • Season & Sear Steak: Slice steak against the grain into 1/2-inch strips; pat dry. Toss with 1 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp salt, 1/2 tsp pepper. Heat a cast-iron skillet over medium-high until smoking. Sear steak in batches 2-3 mins per side for medium-rare. Remove to a plate, cover, and rest 5 mins.
  • Assemble Bowls: Divide crispy fries between two bowls. Top with rested steak strips. Garnish with fresh herbs or a drizzle of your preferred sauce, if desired. Serve immediately.
