These delightful Strawberry Brownie Kabobs combine rich, fudgy chocolate brownies with fresh, juicy strawberries for an irresistible treat. Perfect for any gathering, they’re easy to assemble and guaranteed to impress.
Ingredients
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) light brown sugar, packed
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 3/4 cup (75g) unsweetened cocoa powder (Dutch-processed recommended)
- 1/2 cup (60g) all-purpose flour
- 1/2 teaspoon salt
- Optional: 1/2 cup chocolate chips or chopped dark chocolate
- 2–3 pints fresh strawberries, hulled and some halved if large
- 16–20 (6-8 inch) wooden or metal skewers
- Optional: Melted chocolate for drizzling
- Optional: Powdered sugar for dusting
Instructions
- Step 1: Prepare Brownie Batter: Preheat oven to 350°F (175°C). Grease and flour an 8×8 or 9×9 inch baking pan, or line with parchment paper. In a large bowl, whisk melted butter with granulated and brown sugars. Beat in eggs one at a time, then vanilla.
- Step 2: Add Dry Ingredients: In a separate bowl, whisk cocoa powder, flour, and salt. Gradually add to wet ingredients, mixing until just combined. Fold in optional chocolate chips.
- Step 3: Bake Brownies: Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick comes out with moist crumbs. Cool completely in the pan on a wire rack, then remove and cool further for several hours or overnight.
- Step 4: Cut Brownies and Prepare Strawberries: Once brownies are fully cooled, cut into approx. 1-1.5 inch cubes using a sharp knife. Wash and hull strawberries, cutting larger ones to match brownie size.
- Step 5: Assemble Kabobs: Thread alternating brownie cubes and strawberries onto skewers. Start and end with a brownie cube for stability.
- Step 6: Finish and Serve: Arrange kabobs on a platter. Drizzle with melted chocolate or dust with powdered sugar if desired. Serve immediately or chill briefly.
