Ingredients
- 4 ears fresh corn, kernels removed and cooked (grilled, roasted, or sautéed) and cooled
- 2 large English cucumbers, diced
- 1/4 cup finely diced red onion
- 1/2 cup mayonnaise
- 1/4 cup sour cream (or Mexican crema/Greek yogurt)
- 2 tbsp fresh lime juice
- 1–2 tsp chili powder (or Tajín seasoning), to taste
- 1/4 tsp smoked paprika (optional)
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/2 cup crumbled Cotija cheese (or feta cheese), divided
- 1/4 cup fresh cilantro, chopped
Instructions
- 1. Cook the Corn: If using fresh corn, grill, roast, or sauté the kernels until tender with some char. Let cool completely. If using frozen, sauté until heated through and lightly browned.
- 2. Prepare Vegetables: Dice cucumbers and red onion. Roughly chop cilantro.
- 3. Make the Dressing: In a large bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika (if using), salt, and pepper until smooth and creamy. Taste and adjust seasonings.
- 4. Combine Ingredients: Add cooled corn, diced cucumbers, red onion, and most of the crumbled cheese to the dressing bowl. Gently fold until evenly coated.
- 5. Chill and Serve: Cover and refrigerate for at least 30 minutes to allow flavors to meld. Just before serving, stir in the fresh cilantro and garnish with the remaining cheese.
