Ingredients

  • 4 ears fresh corn, kernels removed and cooked (grilled, roasted, or sautéed) and cooled
  • 2 large English cucumbers, diced
  • 1/4 cup finely diced red onion
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream (or Mexican crema/Greek yogurt)
  • 2 tbsp fresh lime juice
  • 12 tsp chili powder (or Tajín seasoning), to taste
  • 1/4 tsp smoked paprika (optional)
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 1/2 cup crumbled Cotija cheese (or feta cheese), divided
  • 1/4 cup fresh cilantro, chopped

Instructions

  • 1. Cook the Corn: If using fresh corn, grill, roast, or sauté the kernels until tender with some char. Let cool completely. If using frozen, sauté until heated through and lightly browned.
  • 2. Prepare Vegetables: Dice cucumbers and red onion. Roughly chop cilantro.
  • 3. Make the Dressing: In a large bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika (if using), salt, and pepper until smooth and creamy. Taste and adjust seasonings.
  • 4. Combine Ingredients: Add cooled corn, diced cucumbers, red onion, and most of the crumbled cheese to the dressing bowl. Gently fold until evenly coated.
  • 5. Chill and Serve: Cover and refrigerate for at least 30 minutes to allow flavors to meld. Just before serving, stir in the fresh cilantro and garnish with the remaining cheese.
