Ingredients
- 4 cups fresh or frozen corn kernels (from 4–5 ears)
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 2 tablespoons fresh lime juice
- 1/2 teaspoon chili powder or smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled Cotija cheese
- 1/4 cup finely minced red onion
- 1/4 cup chopped fresh cilantro
- 1 small jalapeño, minced (optional, deseeded for less heat)
Instructions
- Char the Corn: Grill, pan-fry, or broil corn kernels until tender and lightly charred. Let cool slightly, then cut from cobs if using fresh.
- Prepare Dressing: In a large bowl, whisk together mayonnaise, sour cream (or crema), lime juice, chili powder, salt, and pepper until smooth.
- Combine Ingredients: Add charred corn, Cotija cheese, red onion, cilantro, and minced jalapeño (if using) to the dressing.
- Mix and Chill: Gently fold ingredients until well coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
