Ingredients
- 1 lb large, firm fresh strawberries
- 8 oz full-fat block cream cheese, softened to room temperature
- 1/2 cup powdered sugar
- 1 tsp pure vanilla extract
- 1/2 cup graham cracker crumbs
- 2 tbsp unsalted butter, melted

- Prep the Strawberries: Wash and hull strawberries. Using a small spoon or paring knife, gently scoop out enough of the center to create a cavity for the filling.
- Make the Cheesecake Filling: In a bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Pipe the Filling: Transfer filling to a piping bag with a star tip (or a Ziploc bag with a snipped corner). Pipe generously into each strawberry cavity.
- Prepare the Crumb Topping: In a small skillet, melt butter over medium heat. Add graham cracker crumbs and toast, stirring constantly, until fragrant and lightly golden (3-5 minutes). Let cool.
