Ingredients
- 8 small (6-7 inch) flour tortillas
- 8 large eggs
- 1/4 cup milk or cream (optional, for eggs)
- 1/2 lb breakfast sausage or 6–8 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese, divided
- 1/2 cup shredded Monterey Jack cheese, divided (or more cheddar)
- 1/4 cup diced green chiles (canned), drained (optional)
- 1/4 cup finely diced onion (optional)
- 1/4 cup finely diced bell pepper (optional)
- Salt and black pepper to taste
- 1 tbsp cooking oil (for skillet)
- Fresh cilantro, salsa, or sour cream for serving (optional)
Instructions
- 1. Preheat Oven & Prep Fillings: Preheat oven to 375°F (190°C). Cook and crumble sausage/bacon, drain fat, and set aside. Sauté diced onion and bell pepper (if using) until tender. Scramble eggs in a skillet with oil/butter; season with salt and pepper. Cook until just set but still moist.
- 2. Assemble Tacos: Lightly grease a large baking sheet. Arrange tortillas on the sheet, slightly overlapping to form a ‘taco’ shape. Sprinkle a thin layer of shredded cheese on each tortilla. Evenly divide scrambled eggs, cooked meat, and sautéed veggies among the tortillas. Top with green chiles (if using).
- 3. Bake to Perfection: Sprinkle the remaining shredded cheese over the tacos. Bake for 12-18 minutes, or until tortillas are lightly golden and crisp, and cheese is melted and bubbly.
