Ingredients
- 1 fresh baguette or rustic Italian loaf, sliced ½-inch thick
- 2–3 ripe large tomatoes (or 1 pint cherry/grape tomatoes), diced
- 8 oz fresh burrata cheese, well-drained
- ¼ cup fresh basil leaves, chopped or chiffonaded
- 2 tbsp extra virgin olive oil, plus more for brushing and drizzling
- 1–2 garlic cloves, peeled and halved
- Pinch of sea salt, plus more to taste
- Freshly ground black pepper, to taste
- 2 tbsp balsamic glaze, for drizzling (store-bought or homemade)
Instructions
- Preheat oven to 400°F (200°C). Slice bread and brush lightly with olive oil. Toast on a baking sheet for 5-8 minutes until golden brown and crisp. Immediately rub warm toast with cut side of garlic cloves.
- While bread toasts, dice tomatoes and place in a bowl. Add chopped basil, 2 tbsp olive oil, a pinch of sea salt, and black pepper. Stir gently to combine and adjust seasoning.
- Carefully tear or gently spread a creamy dollop of well-drained burrata cheese over each piece of garlic-rubbed toast.
- Top each burrata-laden toast with a generous spoonful of the tomato and basil mixture.
- Arrange on a platter, drizzle with extra virgin olive oil and balsamic glaze. Garnish with a final sprinkle of flaky sea salt and fresh basil leaves. Serve immediately.
