Ingredients

  • 18 oz (approx. 500g) fresh cheese tortellini
  • 1 pint (approx. 2 cups) cherry tomatoes, halved
  • 8 oz (approx. 225g) fresh mozzarella balls (bocconcini), drained
  • ½ cup fresh basil leaves, torn or thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ¼ cup high-quality balsamic glaze, for drizzling

Instructions

  • Bring a large pot of salted water to a rolling boil. Add the fresh cheese tortellini and cook according to package directions (typically 2-3 minutes). Drain thoroughly and rinse with cold water to stop cooking and prevent sticking. Transfer to a large mixing bowl.
  • In a small bowl, whisk together the extra virgin olive oil, minced garlic, a pinch of salt, and freshly ground black pepper to create the dressing.
  • To the bowl with the cooled tortellini, add the halved cherry tomatoes, drained fresh mozzarella balls, and fresh basil leaves. Pour the prepared dressing over the ingredients. Gently toss to combine, ensuring everything is lightly coated.
  • Transfer the Tortellini Caprese Salad to a serving dish. Just before serving, generously drizzle with the balsamic glaze. Season with additional salt and pepper to taste, if needed. Serve immediately or chill for 30 minutes for optimal flavor.
